NO-LABOR RECIPE FOR YOUR LABOR DAY WEEKEND!

It’s time to (unofficially) end the summer with one last hurrah. Labor Day weekend is a time to honor those who have contributed to the strength, well-being, and prosperity of America.

This may be our last time to grill out. Friends and relatives will be closing up their pools and storing their boats for the season. Retailers will be offering up their biggest sales and promotions of the summer, marking one of the largest shopping weekends of the year.

No-Labor 3-Bean Salad

INGREDIENTS

15-ounce can canellini beans, drained and rinsed

15-ounce can chickpeas, drained and rinsed

15-ounce can kidney beans, drained and rinsed

celery stalks, finely chopped

1/2 red onion, finely chopped

cup fresh flat-leaf parsley leaves, finely chopped

tablespoons finely chopped fresh rosemary

tablespoons fresh lemon juice

1/4 cup extra-virgin olive oil

teaspoon kosher salt

1/4 teaspoon black pepper

DIRECTIONS

  • In a large bowl, combine the cannellini beans, chickpeas, kidney beans, celery, onion, parsley, and rosemary. 
  • In a small bowl, whisk together the lemon juice, oil, salt, and pepper.
  • Drizzle the vinaigrette over the salad and toss. Serve at room temperature.
